Recipe for Spelt-Oatmeal Pancake Mix

Preheat your oven to 225 degrees and slide a sheet pan onto the middle rack. 

Combine 2 lightly beaten eggs and 2 ½ cups milk, buttermilk or ‘mylk’. Pour over dry ingredients and stir until just combined. Fold in 6 tablespoons melted butter, melted coconut oil or extra virgin olive oil. Heat cast iron skillet over medium-high heat. Add some butter to the pan and let it melt (the butter is key to getting a crisp doughnut-like exterior on these cakes.) Pour batter into pan by ¼ cup scoops; flatten out slightly. When bubbles form, flip pancake and brown on the second side. You may need to adjust the heat under the skillet as you make these.

Transfer pancakes to the sheet pan in the oven. Let sit in there for at least 5 minutes; this will ensure the pancakes are cooked all the way through and will also keep the pancakes warm until you are ready to eat them!
